Q: I want to hook it up to my draft fan on wood stove hook up probe to flue pipe so when my flue pipe reaches a prograbable temp the draft fan shut off?

A: This will be fine as long as 1 the temperature of flue doesn't exceed temp rating of the probe this will work fine.

Q: Does it display Fahrenheit, Celsius, or both?

A: C. Only. 

Q: Can it take NTC type temperature sensor ?
A: No. it can't.

Q: How to run the self-adjusting(auto-tuning) procedure?

A: Set the parameter CtrL=2;
